    Our Story

    The origin of what is now known as “Chan ramen” traces back to Kanda Chie-chan Ramen, founded beneath the railway tracks of Kanda Station in Tokyo. Some years later, members of the original founding team went on to open Ecchan Ramen in Shinjuku and Hirochan Ramen in Ikebukuro.


    The monthly study sessions held among these three shops later became the foundation of the Chan Noren kumiai.

    As the restaurant industry faced its greatest challenge during the COVID-19 pandemic, the number of independent spin-offs and affiliated shops increased rapidly. At the same time, the industry struggled with labor shortages, rising ingredient costs, and the risk of dilution as similar concepts began to emerge.

    In response, we recognized the importance of preserving, refining, and passing down the authentic taste and philosophy of Chan ramen. What had once been informal information exchanges and study groups evolved into a formal organization—the Chan Noren Kumiai—dedicated to collaboration and mutual support.

    United by the shared “Chan” name, the Chan Noren Kumiai was officially established on January 1, 2022, as a cooperative guild with the mission of ensuring the continuity and prosperity of its member shops, while promoting the culture and recognition of Chukasoba and Mori Chuka.

    Today, more than 30 restaurants across Japan are members of the guild, including Haruchan Ramen, which has been featured in the Michelin Guide for four consecutive years since 2023. As a proud member of the Chan Noren kumiai, we are honored to open the first-ever Chan ramen shop in the United States.

    Our goal is simple:
    a bowl of ramen that anyone—young or old—can enjoy casually,
    a flavor you suddenly crave,
    and a neighborhood shop that is deeply loved by the local community.

    Signature Ramen

    Our ramen features a broth made using traditional Japanese soup-making techniques, where meat, bones, and kombu dashi are simmered slowly. This broth maximizes the umami from various pork cuts like pork butt, pork belly, and pork shoulder. Seasoned with a simple salt-based sauce, it highlights the rich flavor of the pork. The pork topping is cut just before serving and generously piled onto the bowl.
